Visio 2010. How to stop connectors from doing what THEY want.

I'm having two problems, and am not sure how to fix them.  I use my mouse to run connectors between Icons and shapes in a Visio document.  I want to be able to lay out the connector exactly how I want, by putting the mouse at the beginning, running it to a corner, and then continuing on.  For whatever reason, the connector routes the way Visio wants, and not the way that I want.  To solve this, I started running separate connectors for each straight run.  If I needed to change direction, I added another connector.  Not great, but it worked.

The problem now is that when I attempt to insert a text label near the connector, the label moves the connector, so I can't get the text anywhere near the connector without it moving.

 

Can someone explain how to run connectors so that it's easy, and goes the way that I want, and how I can turn off this automated movement when I try to place text near the connector?
